Garlic & Chive Mashed Potatoes


  • 2 ½ lbs. russet potatoes, peeled and cut into chunks
  • ¼ cup milk or half & half
  • ¼ cup butter
  • 1 tsp. salt
  • Freshly ground pepper
  • 1 tbsp. O&CO. Garlic Specialty Oil
  • 2 tbl. snipped fresh chives


  1. Fill a large saucepan with water, add potatoes and bring to a boil. 
  2. Cook potatoes until tender, about 15-20 minutes, drain well. 
  3. Put potatoes in a large bowl. 
  4. Mash potatoes with masher or electric mixer, adding milk, butter and salt. 
  5. When potatoes are creamy, beat in garlic oil and chives. 
  6. Taste for salt and pepper. 
  7. If you like very garlicky potatoes, add more oil to taste; serve hot.
