Garlic Olive Oil & Saffron Aioli


  • 1 tsp. mustard
  • 1 egg yolk
  • 5 threads O&CO. Saffron
  • Salt
  • Freshly ground pepper
  • O&CO. Garlic Olive Oil
  • O&CO. Mini-Crostini with Olive Oil


  1. Whisk together the mustard, egg yolk, saffron, a pinch of salt and pepper in a mixing bowl. 
  2. Add the garlic oil a little at a time, in a slow stream while whisking constantly.
  3. When the sauce is firm and homogenous, adjust seasoning with salt and pepper to taste. 
  4. Serve the aioli spread on the mini crostini with fish soup or with steamed fish and vegetables.
