Garlic Olive Oil & Saffron Aioli
Ingredients
- 1 tsp. mustard
- 1 egg yolk
- 5 threads O&CO. Saffron
- Salt
- Freshly ground pepper
- O&CO. Garlic Olive Oil
- O&CO. Mini-Crostini with Olive Oil
Directions
- Whisk together the mustard, egg yolk, saffron, a pinch of salt and pepper in a mixing bowl.
- Add the garlic oil a little at a time, in a slow stream while whisking constantly.
- When the sauce is firm and homogenous, adjust seasoning with salt and pepper to taste.
- Serve the aioli spread on the mini crostini with fish soup or with steamed fish and vegetables.
