Greek Style Shrimp Scampi and Linguini

Greek Style Shrimp Scampi and Linguini


    • 1 pound linguini 
    • Kosher salt 
    • 1-pound medium or large shrimp deveined and peeled, tails removed 
    • Ground Black pepper 
    • 1/3 cup O&CO. lemon specialty olive oil 
    • 2-3 minced garlic 
    • Pinch of red pepper flakes 
    • 1/2 lemon, zested and juiced 
    • 1 tsp. dried oregano
    • Handful of O&CO. kalamata olives, pitted and chopped 

  • 1 cup white wine 
  • 2-3 tbsp. dried parsley
  • 1 cup feta cheese crumbles


  1. Place a large pot of water on the stove to boil. 
  2. Salt water and cook pasta to al dente.
  3. Season the shrimp with salt and pepper.
  4. While the pasta water comes to a boil, heat olive oil in a deep skillet.
  5. Add shrimp and cook 3 to 4 minutes. 
  6. Add red pepper flakes, minced garlic, lemon zest, oregano, olives, and wine and cook together a couple of minutes more.
  7. Remove shrimp from heat.
  8. Add a ladle of starchy pasta cooking water to sauce and some lemon juice.
  9. Remove the sauce from the heat.
  10. Drain pasta and add to the skillet with shrimp.  
  11. Let pasta soak in juices for a few minutes then toss with parsley and feta, stirring to mix all ingredients.
  12. Serve with nice crusty bread and a light crisp salad. *Serves 4 

 Note:  Pinot Grigio or Sauvignon Blanc is great in this recipe
