Green Lemon & Herb Marinated Lamb Lollipops


  • 16 baby lamb chops
  • 1/3 cup O&CO. Green Lemon Specialty Olive Oil
  • 4 tbsps. O&CO. White Balsamic with Oregano
  • ¼ cup chopped fresh oregano
  • 5 cloves garlic, peeled & minced
  • 1 tsp. O&CO. Fleur de Sel
  • Freshly ground pepper
  • juice of one lemon
  • 1 cup Greek style yogurt


  1. Place lamb chops in a large glass dish. 
  2. Whisk together the olive oil, vinegar, garlic half the oregano, salt and pepper. 
  3. Pour mixture over the lamb;  cover and refrigerate for at least 4 or up to 24 hours. 
  4. Arrange chops on a rack in a pan and broil for 2 minutes per side.
  5. Mix together the yogurt, the remaining oregano and lemon juice.
  6. Serve the lamb chops along side the yogurt mixture for dipping.
