Green Lemon & Herb Marinated Lamb Lollipops
Ingredients
- 16 baby lamb chops
- 1/3 cup O&CO. Green Lemon Specialty Olive Oil
- 4 tbsps. O&CO. White Balsamic with Oregano
- ¼ cup chopped fresh oregano
- 5 cloves garlic, peeled & minced
- 1 tsp. O&CO. Fleur de Sel
- Freshly ground pepper
- juice of one lemon
- 1 cup Greek style yogurt
Directions
- Place lamb chops in a large glass dish.
- Whisk together the olive oil, vinegar, garlic half the oregano, salt and pepper.
- Pour mixture over the lamb; cover and refrigerate for at least 4 or up to 24 hours.
- Arrange chops on a rack in a pan and broil for 2 minutes per side.
- Mix together the yogurt, the remaining oregano and lemon juice.
- Serve the lamb chops along side the yogurt mixture for dipping.
