Grilled Eggplant Sammie

Grilled Eggplant Sammie


  • 1-2 large eggplants (cut 8 equal slices) 
  • 1 large red pepper, quartered
  • 1 large fresh portabella mushroom cap, sliced 
  • 4 slices of turkey bacon cooked, cut in 1/2 
  • 4 oz. mozzarella cheese, low-fat 
  • 4 tbsp. O&CO. Everyday Olive Oil 
  • 1 tbsp. O&CO. Herbes de Provence 
  •  Kosher salt & pepper to taste


  1. Slice eggplant, sprinkle salt on both sides and place on paper towel for 15 minutes to dry.
  2. Brush eggplant with 1 tbsp. of olive oil, sprinkle both side with herbs, salt and pepper.
  3. On a hot grill pan, add 1 tbsp. olive oil. 
  4. Grill eggplant about 3-4 minutes on each side, remove from pan.  
  5. Add 1 tbsp. olive oil to grill pan. 
  6. Add sliced mushrooms and brown on both sides, remove from pan. 
  7. Add 1 tbsp. olive oil to grill pan. 
  8. Grill red peppers 2-3 minutes on each side, remove from pan. 
  9. In an oven proof pan place 4 slices of eggplant followed by cheese, bacon, mushrooms, red pepper and more cheese.
  10. Broil on high until the cheese has melted.
  11. Take out of oven and place eggplant slice on top.
