Grilled Vegetable Couscous

Grilled Vegetable Couscous


  • 1 cup Israeli couscous
  • 1 bundle asparagus
  • 1 small red onion
  • 1 red bell pepper
  • 1 can garbanzo beans, drained (optional)
  • 1-2 tbsp. O&CO. Everyday Olive Oil 
  • 1 mandarin orange, tangerine or orange
  • 1 small shallot
  • 1/4 tsp. dijon mustard
  • 1/4 cup O&CO. Mandarin Specialty Olive Oil  
  • Kosher salt 
  • Fresh ground pepper
  • 4 oz. feta cheese
  • 1/2 cup mint leaves


  1. Cook couscous according to directions.
  2. In a bowl, cut or break off woody stems of asparagus, slice red onion 1/2 inch slices, slice red pepper in 1/2 inch slices. 
  3. Toss vegetables with 1-2 tablespoons O&CO. everyday olive oil.
  4. Sprinkle with kosher salt and fresh ground pepper, grill until slightly charred.
  5. Combine with couscous in large bowl, add garbanzo beans if using.
  6. Dice shallot, combine with mustard, citrus zest and juice. 
  7. Season with salt and pepper.
  8. Whisk in O&CO. mandarin specialty olive oil.
  9. Pour over couscous and veggies and stir to combine.
  10. Add crumbled feta, mint leaves and serve warm or cold over salad.
