Ken’s Salsa Fresca

Ken's Salsa Fresca


  • 12 medium to large sized Roma tomatoes, seeded and finely chopped 
  • 1 large red onion, finely chopped 
  • 1 bunch cilantro, finely chopped (try to get just the leaves)
  • 3 cloves garlic, minced 
  • 6 Serrano chilies or 2 jalapenos , seeded and inner membrane removed and finely  chopped
  • 2 tablespoons O&CO. Everyday Olive Oil 
  • Juice from 1 or 2 limes (your taste) 
  • 3 medium avocados, peeled, seeded, small dice 
  • 2 stalks celery finely chopped
  • 1 sweet Bell pepper (red, green, yellow, orange) finely chopped
  • Salt and freshly ground black pepper, to taste


  1. Mix tomatoes, onions, cilantro, garlic, celery, sweet pepper, Serrano/Jalapeno chilies, extra-virgin olive oil, lime juice, avocados together in a large glass bowl.
  2. Adjust seasonings with salt and freshly ground black pepper. 
  3. Let the flavors come together at room temperature for about 1 hour. 
  4. Refrigerate for 12 hours for the flavors to blend further.
  5. Serve with chips, fish, and seafood, anything you like.
