Orzo Salad with Mozzarella, Tomato & Basil Specialty Olive Oil


  • 1 pound orzo
  • ½  cup O&CO. Basil Specialty Olive Oil
  • ½ pound fresh mozzarella, diced
  • ¼  cup Pecorino Romano, shredded
  • 1 cup fresh basil leaves, roughly chopped
  • 1 package O&CO. Semidried Tomatoes, roughly chopped
  • 2 teaspoons O&CO. Salt & Herb Mix for Pasta & Salads


  1. Prepare the orzo according to package instructions. Add approximately ¼ cup Basil Specialty Olive Oil & mix. Allow the couscous to cool to room temperature.
  2. Add the remaining Basil Oil, mozzarella, basil leaves, Semidried Tomatoes and Salt & Herb Mix & toss. If the mixture seems dry, drizzle with Basil Oil & toss until the salad is the correct consistency.
  3. Top with shredded Pecorino Romano.
