Perfect Roasted Chicken


  • 1 3lb. chicken, cleaned and rinsed
  • 1 small onion, peeled and quartered
  • ½ lemon
  • 2 tsp. Herbes de Provence
  • 1 O&CO. Bouquet Garni
  • Salt & pepper to taste
  • 3 tbsp. O&CO.  Everyday Olive Oil


  1. Preheat oven to 350.
  2. Stuff chicken cavity with onion, lemon and bouquet garni.
  3. Mix olive oil, Herbes de Provence and a pinch of salt and pepper in a small bowl.
  4. Brush the chicken with the oil mixture and place chicken in a roasting pan.
  5. Roast for 2 to 2 ½ hours or until chicken is thoroughly cooked and juices run clear.
  6. Baste about every 20 minutes with pan juices. Cooking time may vary, depending on the size of the chicken.
  7. Discard stuffing mixture before serving.
