Pork Chops in Cherry Sauce


  • 4 boneless center-cut pork chops (about 1 inch thick)
  • 2 tsp. salt
  • 1 tsp. ground black pepper
  • 1/2 cup flour
  • 2 tbsp. O&CO. Everyday olive oil
  • 1 cup thinly sliced onions
  • 1/4 cup O&CO. Balsamic Vinegar 
  • 1 cup chicken broth
  • 1 cup cherry preserves
  • 2 tbsp. butter


  1. Season pork with salt and pepper and lightly dredge in flour.
  2. Heat oil in a heavy skillet. 
  3. Place pork chops in heated skillet; sauté until browned on one side, 5 minutes.
  4. Turn chops and sauté until browned on other side. 
  5. Set chops aside, covered, while preparing sauce. 
  6. Add onions to skillet and sauté until tender, 5 minutes. 
  7. Add vinegar and mix with onions cooking until most of the moisture has cooked off. 
  8. Pour in broth and add cherry preserves.
  9. Cook for an additional 5 minutes until sauce thickens. 
  10. Finish by adding butter a little at a time stirring until melted and incorporated into the sauce. 
  11. Return pork to pan and simmer for 20 minutes - Serves 4
