Pulled Pork


  • 2 lb. boneless pork roast
  • 2, 9 oz. cans crushed tomatoes
  • 1 O&CO. Bouquet Garni
  • 4 oz. fresh baby spinach, chopped
  • 4 cups brown basmati , cooked


  1. In a crock pot or other slow cooker, place pork roast fat side up, bouquet garni, and crushed tomatoes.  
  2. Cook until testing with a fork makes the meat separate (approximately 6-8 hrs).
  3. Remove and discard bouquet garni.
  4. With 2 forks, pull the pork into small shreds.
  5. Combine with spinach and rice and season to taste.
