Rack of Lamb


  • 1 1/2 - 2 lb. rack of lamb
  • 2 tbsp. O&CO. Salt & Herb Mix for Meat
  • 2 tbsp. chopped fine garlic
  • 2 tbsp. O&CO. Everyday Olive Oil


  1. Combine olive oil, herb mix, and garlic into a mortar and pestle and mash together into a paste.  
  2. Spread all over the rack of lamb. 
  3. Marinate for at least 30 minutes or overnight.
  4. Heat oven safe pan with a little bit of olive oil. 
  5. Place rack of lamb in pan and sear each side for 2-3 minutes. 
  6. Place in 350 degree oven and cook for about 20-25 minutes or until a thermometer registers 130 degrees.
  7. Let rest 10 minutes, slice and serve.
