Roast Turkey with Apple & Thyme Rub


  • ¼ cup minced fresh sage
  • ¼ cup minced fresh rosemary
  • ¼ cup minced fresh thyme
  • 1 fresh turkey, cleaned and washed (about 15 lbs.)
  • 1 large apple, quartered
  • 1 large onion, quartered
  • 1 rib celery, cut in half
  • ½ cup O&CO. Everyday Olive Oil
  • O&CO. Fleur de Sel


  1. Combine sage, thyme and rosemary with just enough olive oil to make a paste. With fingers, carefully loosen skin from the turkey breast; rub herbs under the skin. Secure skin to underside of breast with toothpicks.
  2. Place breast side up on a rack in a roasting pan. Stuff turkey with apple, onion and celery. Brush with olive oil and sprinkle with salt to taste.
  3. Bake, uncovered, at 325° for 3 to 5 hours, depending on size of turkey or until a meat thermometer reads 180°. Baste occasionally with pan drippings. (Cover loosely with foil if turkey browns too quickly. Cover and let stand for 15 minutes before removing toothpicks and carving. Yield: 10-12 servings.
