Roasted Asparagus with Parmigiano


  • 1 bunch asparagus (look for medium size stalks)
  • 5 cloves garlic, peeled
  • O&CO. Everyday Olive Oil
  • O&CO. Fleur de Sel
  • Freshly ground pepper
  • ½ cup freshly grated Parmigiano cheese


  1. Preheat oven to 425 degrees. 
  2. Place asparagus on a cookie sheet, drizzle with olive oi, salt and a little fresh pepper. 
  3. Toss to coat all stalks. 
  4. Slice garlic and tuck between stalks. 
  5. Roast until stalks are fork tender, about 20 -25 minutes; you can cook them longer if you prefer more caramelization. 
  6. When asparagus are done, take them out and sprinkle with the cheese. 
  7. Run under the broiler until cheese just melts and begins to bubble, do not burn cheese! Serve immediately.
