Roasted Parsnips with Orange Zest


  • 2 lbs. parsnips, peeled and cut into large matchsticks
  • 1 tbsp. O&CO. Everyday Olive Oil
  • 1 tbsp. O&CO. Mandarin Specialty Olive Oil
  • 1 tsp. O&CO. Fleur de Sel
  • ½ tsp freshly ground pepper
  • Juice of 1 orange
  • Grated zest of 1 orange



  1. Heat oven to 475.
  2. Place parsnips in a large bowl, drizzle with Everyday olive oil, Fleur de Sel and pepper. 
  3. Toss well to coat.
  4. Place parsnips in a large roasting pan and roast, shaking pan occasionally, until veggies are golden, about 15 minutes. 
  5. Remove from oven and toss with orange juice, mandarin oil and zest. 
  6. Toss gently to coat.
  7. Return to oven and roast until parsnips are caramelized, about 5-10 minutes.
