Roasted Sweet Potato Wedges

Roasted Sweet Potato Wedges


  • 4 large sweet potatoes or yams, scrubbed and cut into wedges
  • 4 tbsp. O&CO. Everyday Olive Oil
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • Freshly ground pepper


  1. Preheat oven to 400.  
  2. Mix all ingredients in a large bowl, tossing to coat all wedges with the olive oil mixture. 
  3. Spread the wedges in an even layer on a non stick cookie sheet. 
  4. Roast the potatoes, stirring occasionally, until tender and golden, about 20-25 minutes. 
  5. Remove from oven and serve warm.
