Spicy Basil Shrimp Pasta
Ingredients
- 2 tbsp. Basil Olive Oil
- 2 tbsp. Chili Pepper Olive Oil
- 1 tbsp.butter
- 2 Garlic cloves, crushed
- ½ cup chopped basil
- ½ cup Sun-dried tomatoes
- 1 large ripe tomato, diced
- 1 lb. medium shrimp, no veins
- ¼ cup pecan pieces
- ½ cup feta cheese
- Salt and Pepper
- Pinch of sugar
- 1 lb. O&CO. Penne Pasta (or other favorite)
Directions
- In a large skillet, sauté basil olive oil, chili pepper olive oil and sun-dried tomatoes.
- Add diced tomato and simmer for 5 mintues.
- Add salt, pepper and sugar to taste.
- Add shrimp and pecans, cook over medium heat until shrimp is no longer pink.
- Sprinkle feta cheese evenly over mixture and remove from heat.
- Immediately serve over pasta and garnish with basil leaves
