Spinach, Blue Cheese and Mango Salad


  • 10 oz. bundle of baby spinach 
  • Fruit of 1 mango, cubed 
  • 1 medium tomato, cored, seeded, and finely chopped 
  • 1/3 cup walnuts, toasted and chopped 
  • 1/3 cup green onion, sliced 
  • 1/3 cup blue cheese, crumbled
  • Freshly ground pepper to taste 

  • 3 tbsp. O&CO. Green Lemon Specialty Olive Oil
  • 3 tbsp. O&CO. Mango Fruity Condiment 


  1. Place spinach, mango, tomato, walnuts and green onions in a large bowl.
  2. Drizzle with Vinaigrette and toss well to coat.
  3. Add blue cheese and toss again very lightly. 
  4. Serve immediately with freshly ground pepper.
