These pasta, whose name means "rubbing" in the Genovese dialect, are made in Tuscany using artisanal techniques that preserve the wheat germ. Their particular tapered and braid shape makes it easy to hold with all the sauces. Oliviers&Co. selected exceptional pasta, produced in Pisa (Tuscany, Italy) since 1860 and 5 generations by the Morelli family. Their secret lies in an ingredient that is not found in most common types of pasta: the wheat germ. Their production methods best preserve the ingredients, allowing the pasta to keep their exceptional texture and a unique taste.
